Yummy soft mango cake with fresh mangoes and without egg.

  • Fine semolina - 1 cup
  • Mango Puree - 1 cup
  • Sugar - 1/2 cup
  • Butter - 1/4 cup + 2 tbsp [at room temperature]
  • Baking Powder - 1 tsp
  • Cardamom Powder - a pinch [optional]

Chop mangoes and puree them in a blender without water. Grease the baking pan with little butter and keep aside. Preheat the oven at 190 deg C for 10 minutes.

In a bowl mix semolina with baking powder and cardamom powder.

Add mango puree to semolina mixture and mix.

Now add butter to this mixture.

Keep this batter undisturbed for 10 minutes. Then mix and transfer the batter to the cake pan. [Batter consistency will be similar to muffin batter.]

Bake for 20 - 30 minutes. Check by inserting a toothpick in the center of the cake, if it comes out clean, the cake is ready.

Allow it to cool completely before you unmould and slice them.

Use only fine semolina. You can also arrange some fresh mango pieces in the pan before you transfer the batter or you can also mix finely chopped mangoes in the batter. Adjust the sugar according to the sweetness of mangoes. Add chopped nuts if you prefer.
