  • Coriander Seeds - 1/4 cup
  • Green Cardamom - 2 tsp
  • Black Cardamom - 3
  • Pepper - 2 tsp
  • Cloves - 2 tsp
  • Fennel Seeds - 1 tsp
  • Star Anise - 4
  • Cinnamon Sticks (approx 1 inch) - 4
  • Whole nutmeg - 1/2 or Nutmeg Powder - 1 tsp
  • Bay Leaves - 2
  • Dried Red chillies - 4 (adjust to taste)
  • Cumin - 2 tsp
  • Whole Mace - 1
  • Finely chopped dried garlic- 1 tsp
  • Dry Ginger - 1 inch (or) Dry Ginger Powder - 1 tsp

Measure all the ingredients and set aside. Crush Black Cardamom, nutmeg, Dried Ginger.
