  • Urad dhal - 1/4 cup
  • Channa Dhal - 1/2 cup
  • Toor dhal - 1/2 cup
  • Dried Red chilli - 12(adjust to taste)
  • Whole Pepper - 2 tsp
  • Cumin Seeds - 2 tsp
  • Asafoetida Powder - 3 tsp
  • Curry leaves - 2 Sprigs
  • Salt - to taste
  • Sesame Seeds- 2 tsp
  • Coriander Seeds - 1/4 cup

Measure all the Ingredients and set aside.

Roast Urad dhal, Coriander Seeds, Pepper, Cumin, Curry leaves, Sesame Seeds by adding them one by one separately.

Cool the roasted ingredients.

Grind to desired consistency. Add Asafoetida,and salt.

If using wet asafoetida,add small goose berry size.if using whole turmeric pod, add 2 inch of it.dry fry these along with other ingredients and grind them.

With 1/2 cup of this powder, temper with mustard, cumin, fenugreek, onion, chillies, vegetables and tamarind to make instant sambar

With 1/4 cup of this powder, temper boil the vegetables and temper with mustard, cumin to make instant Kootu.

You can serve this powder with Plain Rice with desired oil or ghee.
