this can be used as a side dish for arisi upma
Egg plant (Brinjal) Pitla :
Egg plant – small – 4 to 5
Tamarind water(dilute) – 1 small cup
Turmeric powder – a pinch
Split channa dhal & Urad dhal – Each 1 spoon for frying and grinding and finally little for seasoning.
Coconut – 1 small cup
Coriander seeds – half spoon
Boil brinjal in tamarind water with added turmeric powder, a pinch and salt.
Meanwhile, fry split channa dhal and urad dhal with coriander seeds, followed by coconut and then red chillies.Then grind it.
On the other hand, cook toor dhal separately and once the brinjal is cooked, add the cooked dhal and then the ground powder and stir well,allow it to boil, and the entire mixture should be thick and not dilute. Add coriander leaves.
Finally, heat little coconut oil, add mustard seeds to splutter and then add urad dhal and split channa dhal, followed by curry leaves and asafetida.
